Easter isn’t Easter without the aroma of roasted goat filling the kitchen from the early morning hours. An ancient, simple, yet flavor-rich dish that has only one true star (besides the meat): 'o ruoto (the traditional baking pan). Today, we reveal how to prepare a perfect roasted goat with potatoes and peas, just like grandma would, using the rectangular tray from our Mamù line.
The secret is in the "roasting tin" 🥘
For the goat to be tender inside and crispy outside, heat distribution is key. The aluminum of our pans allows the potatoes to become golden and the meat to cook evenly without drying out.
🛒 Ingredients (Serves 4/6):
- Goat meat: 1 kg (cut into pieces)
- Potatoes: 700 g
- Peas: 300 g (fresh or frozen)
- Onion: 1 large
- Extra Virgin Olive Oil: 1 small glass
- Water: as needed
- Salt and Pepper: to taste
- Rosemary or herbs: (optional, to taste)
👨🍳 Instructions:
1) Prep the base: Start by peeling the potatoes and cutting them into medium-sized chunks (so they don't break apart during the long cooking time). Thinly slice the onion: it will create a delicious gravy at the bottom of the pan.
2) Assemble the "Ruoto": Take your Mamù rectangular tray. Arrange the goat pieces, potatoes, peas, and sliced onion. Season with olive oil, salt, and a pinch of pepper.
3) Grandma’s secret touch (The Water): Add a little water to the bottom of the pan (about half a glass, just enough to barely cover the bottom). This creates the steam needed to make the meat incredibly tender during the first stage of cooking.
4) Into the oven! Bake in a preheated static oven at 200°C for about an hour to an hour and fifteen minutes. Angelo’s Tip: Halfway through, gently turn the potatoes and meat to brown them on both sides. If it looks too dry, add another splash of water.
5) The crispy finish: In the last 10 minutes, use the grill function for extra-crispy potatoes!

Serve directly in the pan: Mamù aluminum retains heat for a long time, so the second helping will be just as warm as the first!
