Description
Description
The pan used by restaurant professionals—now available for home use. The Mamù HoReCa pan is made of 99.5% pure aluminum, the same alloy used in professional restaurant and hotel kitchens: no chemical coating, no intermediate membrane, only direct heat conduction from the metal to the food. The purity of the aluminum guarantees the absence of nickel and PFOA, two elements that professional kitchens must exclude by law. The sturdy handle is designed to withstand heavy use and the temperatures of direct transfer from the stovetop to the oven.
- 99.5% Pure Aluminum: Direct thermal conduction, uniform heat across the entire surface without intermediate layers
- PFOA and Nickel Free: Compliant with HoReCa regulations, safe for sensitive foods and people with nickel allergies
- Sturdy Handle: Reinforced construction for heavy use, resistant to impacts and drops
- Made in Italy: Italian production according to HoReCa specifications, the same standards as suppliers for professional restaurants
- Oven Safe: Direct transfer from the stovetop to the oven without changing utensils

Painting
At this stage, the raw aluminum disc is prepared and enhanced through a sophisticated 7-layer painting process. This advanced technology ensures maximum adhesion of the coating and allows for the creation of high-quality finishes, from glossy black to a textured stone effect.
Handle
The body of the pot is completed with the installation of the handle, a key component for functionality and ergonomics. This versatile production process combines the efficiency of fully automated lines for standard models with the meticulous manual assembly required for professional restaurant series.
Movement
The efficiency of the production line is ensured by advanced automation systems that manage the flow of semi-finished products. Using robotic manipulators equipped with precision suction cups, the pot bodies are automatically moved and stacked, ensuring speed of execution and the complete integrity of the freshly painted surfaces.
Turning
By removing excess metal, the thicknesses are defined with millimetric precision and the pan is given a high-quality surface finish that cannot be achieved by machines alone.
Stamping, Cutting, Edge Banding
For the oven line, turning is replaced with stamping, shearing, and edging. The metal is first molded into the desired shape, then trimmed and finally folded over the edges, creating a 'curled' finish that ensures a safe feel.
Minting and Calibration
This high-precision operation perfects the base of the newly formed pot. Through targeted pressure, the press permanently imprints the company logo and calibrates the surface, creating the slight concavity necessary to ensure stability on the stove and resistance to thermal shock.
Finished product
The cycle concludes with the finished product, a perfect blend of technology and design. The cookware, now ready for use and guaranteed by the Made in Italy label, is stored in the logistics warehouse, ready for distribution and delivery to end customers' kitchens.
Frequently Asked Questions
Is the Horeca pure aluminum pan compatible with induction?
Is the Horeca pure aluminum pan compatible with induction?
No, since it's made of pure aluminum, this pan is not compatible with induction hobs. It's designed for gas and glass-ceramic hobs.
Why choose 99.5% pure aluminum over non-stick aluminum?
Why choose 99.5% pure aluminum over non-stick aluminum?
99.5% pure aluminum ensures exceptional thermal conduction: it heats quickly, distributes heat evenly, and responds instantly to changes in the flame. It's the choice of restaurant professionals who prioritize performance and durability over the convenience of nonstick.
Is the Horeca pan dishwasher safe?
Is the Horeca pan dishwasher safe?
Yes, it's dishwasher safe, but only at a low temperature (max 45°C). To keep the surface intact and maintain thermal performance, hand washing with hot water and a sponge is preferable.
Do I need to condition my pure aluminum pan before first use?
Do I need to condition my pure aluminum pan before first use?
Before using for the first time, wash the pan with hot water and mild soap. For the first few times, use oil or butter generously: pure aluminum develops a natural patina over time that improves its release properties. It's not as non-stick as applied coatings, but it improves with use.
What types of cooking is the Horeca pure aluminum pan ideal for?
What types of cooking is the Horeca pure aluminum pan ideal for?
It's the ideal choice for high-temperature cooking: sautéing vegetables, browning meat, preparing intense sauces, and all professional techniques that require immediate and precise heat. In professional kitchens and HoReCa, pure aluminum is preferred for its superior thermal reactivity.
