Mamù was born from the experience gained over 70 years of producing aluminum pans and pots. The first generation of the Mugnano family entered the world of cookware in 1950. In the 1960s, Mario Mugnano , still very young, took his first steps working in his father's factory, learning the secrets of the process.
After years of passion and dedication, Mario Mugnano brought his vision to life , creating his first company producing nonstick aluminum cookware with his sons. This same passion led his sons to work side by side with him.

Painting
At this stage, the raw aluminum disc is prepared and enhanced through a sophisticated 7-layer painting process on both sides. This advanced technology ensures maximum adhesion of the coating and allows for the creation of high-quality finishes, from glossy black to a textured stone effect.

Molding
The painted discs are transferred to the stamping department where, using high-precision automated presses, the metal is cold-molded. This process transforms the flat disc into the three-dimensional body of the pot, simultaneously defining its structure and the design of the base.

The ruoto is the quintessential Neapolitan mold: shallow, wide, with the flared edges typical of the Campania region. Unlike pastry molds with tall, straight edges, the ruoto allows air to circulate across the entire surface of the cake during baking. Mamù produces the ruoto in durable white aluminum in Italy, in three distinct versions for each type of preparation. Made in Italy.
Ruoto pastiera: the measure of Neapolitan tradition
The ruoto pastiera is the shallowest and widest version: used for Neapolitan pastiera, Easter rustic pizza, and open jam tart. The shallow, flared edges are the signature of the ruoto pastiera, giving the Neapolitan pastiera its traditional shape with the filling clearly visible. Available in eleven sizes, from smallest to largest.
Tall wheel: for leavened products and rising desserts
The tall wheel has higher edges than the pastiera wheel. Use it for leavened desserts that rise, for rustic bread, for tall donuts, and for preparations that require more vertical space. The flared edges remain characteristic of the pie wheel, but the greater height accommodates larger amounts of dough. Available in seven sizes.
Tart wheel: for open tarts
The tart wheel has smooth, outwardly sloping edges: the perfect shape for open jam tarts, open ricotta tarts, and for preparations served in the pie wheel. The smooth edge does not hinder the cutting of slices. Available in five sizes.
White Aluminum: The Traditional Material
All Mamù pans are made of durable white aluminum: natural aluminum without a non-stick coating, the same material used in Neapolitan kitchens for generations. Aluminum conducts heat excellently, ensuring even heat distribution across the entire base. Over time, the interior surface develops a natural patina that improves with each use. Hand wash with water and a soft cloth; avoid the dishwasher to maintain the aluminum's shine.
