Mamù Cookware

For over 70 years guided by passion, design and innovation Made in Italy

Mamù was born from the experience gained over 70 years of producing aluminum pans and pots. The first generation of the Mugnano family entered the world of cookware in 1950. In the 1960s, Mario Mugnano , still very young, took his first steps working in his father's factory, learning the secrets of the process.

After years of passion and dedication, Mario Mugnano brought his vision to life , creating his first company producing nonstick aluminum cookware with his sons. This same passion led his sons to work side by side with him.

The white aluminum tart pan is the traditional Neapolitan open tart pan: low, smooth edges sloping outward, a flat bottom, and a wide shape. The smooth, uncurled edges make it easy to cut slices, and you can bring the pan to the table for serving. Mamù produces it in durable white aluminum, available in five sizes. Made in Italy.

Tart pan vs. non-stick tart pan: the differences

The white aluminum tart pan is the traditional pan: uncoated, natural aluminum, smooth sloping edges. In Naples, it is used for jam tarts, ricotta tarts, and open pastieras. The smooth, sloping edges have no festoons that complicate cutting, and the natural slope makes it easier to unmold the tart.

The non-stick tart pan with scalloped edge is the modern version with a coating: easier to clean, the tart comes out without greasing, but the scalloped edge is decorative and changes the final visual result.

For traditional Neapolitan tarts, the white aluminum tart pan is the perfect choice. For baking without greasing the pan, the non-stick pan is the most practical choice.

Five sizes for every occasion

The Mamù tart pan is available in five sizes to suit every number of guests. The smallest size is for tarts for 4-6 people, perfect for a family lunch. The medium sizes are suitable for lunches for 8-10 people. The larger size is for tarts to bring to parties or to make leftovers for later.

How to use the tart pan

Before rolling out the shortcrust pastry, butter the bottom and sides of the pan. Roll out the pastry and press it firmly against the sloping edges. The filling goes in the center, leaving the edges free. The aluminum foil distributes heat evenly: the base stays crispy and the filling cooks evenly. For a tart with a rack, draw stripes on the surface of the filling.
