Mamù was born from the experience gained over 70 years of producing aluminum pans and pots. The first generation of the Mugnano family entered the world of cookware in 1950. In the 1960s, Mario Mugnano , still very young, took his first steps working in his father's factory, learning the secrets of the process.

After years of passion and dedication, Mario Mugnano brought his vision to life , creating his first company producing nonstick aluminum cookware with his sons. This same passion led his sons to work side by side with him.

At this stage, the raw aluminum disc is prepared and enhanced through a sophisticated 7-layer painting process on both sides. This advanced technology ensures maximum adhesion of the coating and allows for the creation of high-quality finishes, from glossy black to a textured stone effect.

The nonstick grill plate has raised ridges on the bottom that leave classic cooking streaks on the meat, draining fat into the grooves and keeping the food drier than a flat pan. Achieve grilled results on any stovetop, without excessive smoke and without external equipment. Mamù produces it in PFOA-free nonstick aluminum, Made in Italy.

Raised ridges: what changes do they make to cooking

The raised ridges on the grill plate have two distinct effects on cooking. First, the fat that escapes from the meat sinks into the grooves between the ridges instead of pooling under the food. The meat cooks dry, rather than frying in its own fat. The result is lighter cooking and a flavor closer to grilled. Second, the stripes leave the classic brown streaks on the surface of the meat, both for the visual effect of the grill and for the flavor of the Maillard reaction concentrated at the contact points.

With the PFOA-free, scratch-resistant coating, the meat doesn't stick to the stripes during cooking, which is the main problem with uncoated or low-quality grill plates. Cook without oil or with very little: once ready, the meat comes off without tearing.

What to cook on the grill plate

  • Steaks and slices of meat: the quintessential food of the grill plate. The lines mark the cooking process and the fat drains into the grooves.
  • Hamburgers: The grilled surface retains the juices and creates the characteristic outer crust.
  • Whole or filleted fish: With the PFOA-free non-stick coating, the fish doesn't stick to the lines and doesn't break.
  • Vegetables: Grilled zucchini, eggplant, peppers, and onions develop the typical grilling lines.
  • Bread and bruschetta: Bread browns on the grill plate and develops the toasted lines.

Grill plate vs. grill pan: the difference.

The grill plate and the grill pan both have raised lines, but with different constructions. The grill plate has a wider, flatter shape, suitable for preparations that require a large, even surface. The grill pan tends to be shaped more like a frying pan, with a handle and side edges that better retain juices. For everyday home use, the performance is very similar.
