The Recipe: Rigatoni with Yellow Cherry Tomato Cream and Stracciatella 🍅✨

Ingredients (for 4 people):
- 400g Rigatoni (or your favorite short pasta)
- 400g yellow cherry tomatoes (canned or fresh)
- 200g fresh Stracciatella cheese (or Burrata core)
- 1 garlic clove
- A few fresh basil leaves
- Extra virgin olive oil to taste
- Salt and black pepper to taste
Method:
1) Prepare the base: In your Mamù Sauté Pan, brown the garlic clove with a generous drizzle of EVOO. Once the garlic is golden, remove it and add the yellow cherry tomatoes. Season with salt and pepper and cook over medium heat for about 10-12 minutes until they are soft and juicy.
2) Cook the pasta: Meanwhile, drop the rigatoni into plenty of boiling salted water. Drain them definitely al dente (at least 2-3 minutes before the package instructions), keeping a generous mug of the pasta cooking water.
3) The Sauté Pan magic: Toss the rigatoni directly into the Sauté Pan with the tomatoes. Add half a ladle of the reserved cooking water and start moving the pan back and forth, using the front flare to flip the rigatoni.
