Chinese dumplings are one of the most popular specialties of Chinese cuisine. They are small sheets of dough filled with meat or vegetables, steamed in a bamboo bowl or a pot of water. Making them takes a bit of time, but the result is worth the effort: a flavorful, light, and tasty dish, perfect as an appetizer or main course. If you're a lover of Chinese cuisine or simply curious to discover new recipes, making steamed Chinese dumplings is an excellent choice, especially around Christmas time. Chinese New Year , one of the most important holidays of the year. Their name, jiaozi , sounds like the Chinese term that can be translated with the expression make money grow . Eating them during New Year's Eve, therefore, is considered an omen of good luck and prosperity for the coming year.

Their versatility makes them suitable for all tastes, and they are also easy to prepare. Ingredients for 16 servings:
For the pasta:
- 220 g of 00 flour
- 120 g of water
- Salt to taste
For the filling:
- 100g minced pork
- 70 g of cabbage
- 1 carrot
- 1 spring onion
- 1 ginger root or 1 teaspoon ginger powder
- Half a clove of garlic
- 1 tablespoon soy sauce
- Salt to taste
Procedure for grilled Chinese ravioli
- First, you need to prepare the dough: mix the flour and salt in a bowl, then add the water a little at a time.
- Begin kneading with your hands as you finish adding the water. Once the mixture is smooth, transfer it to a work surface and continue kneading until you obtain a smooth dough.
- Wrap it in plastic wrap and let it rest in the refrigerator for at least thirty minutes. Meanwhile, you can prepare the filling.
- Peel the ginger.
- Rinse the spring onion and cut it into slices.
- Chop the cabbage leaves into pieces. Peel and do the same with the carrot.
- Take a blender, add the ginger and half a peeled clove of garlic and start blending.
- Then, add the vegetables and continue blending. When the mixture is smooth, you can stop.
- Add the minced pork and some salt.
- Add the soy sauce and mix everything together.
- Take the dough out of the fridge and roll it out on the work surface.
- Roll out the dough with a rolling pin on a well-floured work surface: it should be thin. Use a pastry cutter or a glass to cut out round discs.
- Place a teaspoon of filling in the center of each disc. Brush the edges with water and seal them into a crescent shape, or use a crescent mold.
- You can also fold them into a bundle: in this case, however, you will need to make slightly larger discs.
- Now let's move on to cooking. We think they taste better grilled, especially if you use our Fast Induction series wok pan.
- Steaming involves cooking the dumplings in a lightly oiled wok and then steaming them. Use a tablespoon of vegetable oil to grease the wok, heat it, and place the dumplings in the center, closed-side up. Cover with a lid to create a moist environment, and cook for at least five minutes.
- Add a little water to the bottom of the pan , making sure it doesn't come into direct contact with the ravioli. Replace the lid and continue cooking over low heat for about ten minutes. Add a little more water each time the ravioli are used up. It's important to avoid drying out the pasta: this will ensure they're soft and glossy after cooking.
Once the dumplings have rested and cooled in the pan, you can serve them with soy, sweet and sour, or spicy sauce. Enjoy!
