In the 1960s, Mario Mugnano , still very young, took his first steps working in his father's factory, learning the secrets of the process.

After years of passion and dedication, Mario Mugnano brought his vision to life , creating his first company producing nonstick aluminum cookware with his sons. This same passion led his sons to work side by side with him.

At this stage, the raw aluminum disc is prepared and enhanced through a sophisticated 7-layer painting process on both sides. This advanced technology ensures maximum adhesion of the coating and allows for the creation of high-quality finishes, from glossy black to a textured stone effect.

The pizza pan is a round pan with a perforated base designed for round pizza in a home oven: the holes in the bottom direct heat directly to the base of the dough, producing a crispy crust even in a domestic oven. The scratch-resistant, PFOA-free 7-layer coating allows the pizza to be released without tearing the base. Mamù produces it from Italian-made aluminum. Made in Italy.

Why the perforated base changes pizza

The difference between a perforated pizza pan and a regular round pan is in the heat transmission to the base. In a traditional pan, heat must pass through the thickness of the aluminum before reaching the base of the dough. The holes eliminate this step: the oven heat enters from the bottom and cooks the base at the same time as the toppings cook from above. The base is crispy, the mozzarella is melted, and the edge is golden.

In home ovens that don't reach the temperatures of wood-fired ovens, this makes a real difference. With the perforated pizza pan, even at 220-250°C, the base cooks faster and doesn't remain moist in the center.

The non-stick coating and pizza

The scratch-resistant, 7-layer PFOA-free coating is the second feature that distinguishes the Mamù pizza pan from uncoated pans. With the non-stick coating, you can use very little oil on the bottom, or none at all for high-hydration pizzas, and the base comes off without tearing the crust. Neapolitan pizza with a thick crust, dough with 70-80% hydration, and pizzas with a thin, crispy base: they come out without the crust sticking to the holes.

The coating withstands the high temperatures required for pizza. PFOA-free, without releasing substances during high-temperature cooking. Cleaning requires hot water and a soft sponge: dough or tomato residue comes off without scrubbing.

Available sizes and thicknesses

The Mamù pizza pan is available in several sizes to fit your home oven and the amount of pizza you're making:

  • The smallest size is for single-serving pizzas or more compact ovens.
  • The medium size, 28-30 cm, is the standard size for round home pizzas, serving 2-3 people.
  • The largest size is for larger ovens and for pizzas to be shared by four or more people.

The thickness of the aluminum is calibrated for pizza: thin enough to transmit heat quickly through the holes, sturdy enough not to warp during high-temperature cooking.

Other uses of the perforated cake pan

The perforated pizza pan also works well for:

  • Crispy focaccia: the base is drier than a full pan, for crispy, low-fat focaccia, Apulian style
  • Rounded biscuits and cookies: the perforated base dries the biscuit at the bottom
  • Shortcrust pastry tart: the base of the pastry stays crispy instead of softening with the moisture from the fruit or jam
  • Baked piadinas: baked in a perforated cake pan, they come out crispier than in a flat pan

Pizza pan vs. classic round pan: the difference

The classic round pan has a flat bottom and without holes: suitable for deep pan pizza, soft focaccia, and savory pies. The perforated pizza pan has a perforated base for crispy pizza and for preparations where the base needs to dry out during cooking. For Neapolitan pizza with a high crust and crispy base: perforated pan. For tall, soft pan pizza: flat round pan.
