It's about a soft and tasty dessert, openly vegan, whose recipe we're sharing here today not so much because we have a splendid pan that would do this job exceptionally well , but because – deep down – you deserve this tasty caress. the recipe for vegan plum cake with plums

Ingredients for 8 doses:
- 300 g of wholemeal or semi-wholemeal flour
- 80 g of sugar
- 1 sachet of baking powder
- 70 ml of corn oil
- 5 plums
- 1 lemon
- 350 ml of soy milk
- icing sugar to taste
Procedure:
- Grate the lemon zest and add it to a bowl with the plums, preferably cut into segments. Squeeze the lemon into the bowl.
- Separately, in another bowl, mix together the flour, sugar, and yeast.
- Then add soy milk and oil, and knead until the consistency seems smooth.
- It's time to combine the two bowls: add the plums soaked in lemon juice to the mixture.
- When the mixture is ready, transfer it in our Happy Stone plumcake pan and bake at 180° for 35 minutes.
- Check the cooking with a toothpick, to make sure you remove it from the oven at the right time.
- Once it cools, sprinkle with icing sugar and then serve.
