Painting
At this stage, the raw aluminum disc is prepared and enhanced through a sophisticated 7-layer painting process on both sides. This advanced technology ensures maximum adhesion of the coating and allows for the creation of high-quality finishes, from glossy black to a textured stone effect.

Molding
The painted discs are transferred to the stamping department where, using high-precision automated presses, the metal is cold-molded. This process transforms the flat disc into the three-dimensional body of the pot, simultaneously defining its structure and the design of the base.

The hollow mold in white aluminum is the classic ring mold of Italian tradition: the central hole brings heat to the heart of dense, leavened doughs, for even baking. Mamù produces it in durable white aluminum, available in 7 sizes. Made in Italy.
The hollow mold and Italian tradition
The hollow mold is one of the most deeply rooted molds in Italian confectionery tradition: from the Sunday ring cake to the Neapolitan babà, from the savarin to the leavened dough crown, the ring shape with the central hole appears in thousands of regional recipes. The same mold used by Italian grandmothers for their Sunday donuts, still the most reliable for these preparations today.
The central hole: function and tradition
The hole in the center of the mold has a specific technical function: it draws the oven's heat into the dough from all directions at once. A dense or leavened cake cooks from the outside in. The central hole creates a second perimeter of heat that speeds up and evens out the baking process. Without the hole, the center of a dense dough like that of a classic donut remains raw while the outside is already golden.
Desserts for a holed pan

White aluminum and baking leavened cakes
The Mamù perforated mold is made of white aluminum, the traditional choice for leavened cakes. Untreated aluminum allows the dough to adhere slightly to the sides during leavening and the first stage of baking. The dough rises upwards instead of sliding down before the structure solidifies. Butter and flour the mold before use: the cake will release cleanly after baking, having had the necessary anchoring during the rising process.
