At this stage, the raw aluminum disc is prepared and enhanced through a sophisticated 7-layer painting process on both sides. This advanced technology ensures maximum adhesion of the coating and allows for the creation of high-quality finishes, from glossy black to a textured stone effect.

Molding
The painted discs are transferred to the stamping department where, using high-precision automated presses, the metal is cold-molded. This process transforms the flat disc into the three-dimensional body of the pot, simultaneously defining its structure and the design of the base.

The 26 cm nonstick frying pan is the generous size of the Italian pan: for cooking for the whole family, for hearty main courses, for large omelettes, and for dishes that require space on the bottom. With the 7-layer scratch-resistant, PFOA-free coating, you can cook across the entire surface without food sticking. Mamù makes it from Italian aluminum. Made in Italy.
What is the 26 cm pan used for?
The 26 cm pan is the right size for cooking for 3-4 people or for dishes that require extra space at the bottom:
- Large omelette for 4-6 people: 6-8 eggs fill the 26 cm pan, making the omelette just the right height.
- Meat for the family: three steaks, four slices of chicken, a whole piece of meat that needs to cook all over.
- Creaming pasta for 4 people: 400g of pasta with sauce will cream better than a 24 cm pan. More space means more pasta-bottom contact
- Family-sized sautéed vegetables: vegetables need room to sauté, and in the 26 cm pan they don't pile up and get overcooked
- Abundant frying: large cutlets, zucchini flowers for the whole family
The 26 cm pan and creaming pasta
In Italy, pasta is finished in the pan with the cooking water and sauce to create a cream that envelops the pasta. The 26 cm pan is the right size for creaming 350-500g of pasta (3-4 people): you have room to move the pasta without it spilling out, and the large surface area helps reduce the cooking water evenly. If a pan is too small, the pasta will clump together and the sauce will be uneven.
26 cm vs. 28 cm pans: the difference
The 26 cm pan is the most common size in Italian family cooking. The 28 cm is the extra-large size for those who often cook for 5-6 people or need even more space. In practice:
- Cooking for 3-4 people: the 26 cm covers everything.
- Frequently cooking for 5 or more people: consider the 28 cm or the sauté pan in the larger sizes.
26 cm frying pan as the main pan in the kitchen.
Many Italian kitchens have three frying pans: a small 22 cm for eggs, a medium 24 cm for main courses, and a large 26 cm as the main pan. If you want a single pan that does most of the work, the 26 cm is the right one for families of 3-4: large enough for almost everything, yet still manageable for everyday use.
The 7-layer coating in the 26 cm pan
On a large surface like that of the 26 cm pan, the quality of the coating matters even more. A 1-2 layer coating wears first in the center, where the heat is most concentrated: the perimeter holds up, but the center deteriorates.
