In the 1960s, Mario Mugnano , still very young, took his first steps working in his father's factory, learning the secrets of the process.
After years of passion and dedication, Mario Mugnano brought his vision to life , creating his first company producing nonstick aluminum cookware with his sons. This same passion led his sons to work side by side with him.

At this stage, the raw aluminum disc is prepared and enhanced through a sophisticated 7-layer painting process on both sides. This advanced technology ensures maximum adhesion of the coating and allows for the creation of high-quality finishes, from glossy black to a textured stone effect.

Molding
The painted discs are transferred to the stamping department where, using high-precision automated presses, the metal is cold-molded. This process transforms the flat disc into the three-dimensional body of the pot, simultaneously defining its structure and the design of the base.

The non-stick square pan is the perfect shape for desserts to be cut into squares, for tall focaccia, for symmetrical savory pies, and for preparations where even cooking on all sides makes the difference. Mamù produces the square pan in PFOA-free 7-layer non-stick aluminum in three versions: shallow, tall, and perforated. Five sizes available. Made in Italy.
Shallow square pan: for thin desserts and focaccia
The non-stick shallow square pan is the classic for brownies, thin almond cakes, shallow focaccia with cherry tomatoes, and shortcrust pastry sheets. The low edges allow for even cooking across the entire surface and for cutting into neat squares after baking. Available in three sizes from the low series.
Tall Square Pan: For tall focaccia and leavened products
The non-stick tall square pan has higher edges to accommodate generously sized doughs: tall, soft focaccia with a generous crumb, leavened desserts, rice cakes, and preparations that require more vertical space. All corners cook at the same speed thanks to the square shape. Five sizes available.
Perforated Square Pan: For Crispy Baking
The non-stick perforated square pan has a perforated base: the oven heat reaches directly under the dough, resulting in a crispier base and moisture being expelled from the bottom. Cookies stay dry even on the bottom. Use it for tarts with a crispy bottom and square pizzas with a well-baked crust.
7-layer anti-scratch coating: no sticking at the corners
In square pans, the corners are the critical point: the dough tends to stick there. With the 7-layer anti-scratch, PFOA-free coating on all Mamù variants, the cake detaches from the edges without breaking. Cleanup is quick: hot water and a soft sponge.
