Mamù was born from the experience gained over 70 years of producing aluminum pans and pots. The first generation of the Mugnano family entered the world of cookware in 1950. In the 1960s, Mario Mugnano , still very young, took his first steps working in his father's factory, learning the secrets of the process.

After years of passion and dedication, Mario Mugnano brought his vision to life , creating his first company producing nonstick aluminum cookware with his sons. This same passion led his sons to work side by side with him.

At this stage, the raw aluminum disc is prepared and enhanced through a sophisticated 7-layer painting process on both sides. This advanced technology ensures maximum adhesion of the coating and allows for the creation of high-quality finishes, from glossy black to a textured stone effect.

The non-stick conical cake pan is a mold with outwardly flared edges for cakes that are turned upside down: the conical shape guides the release, and the cake takes on an elegant silhouette on the plate, without the need to decorate the edges. With the 7-layer scratch-resistant, PFOA-free coating, the cake falls out of the mold without residue. Mamù produces it from Italian aluminum. Made in Italy.

The conical shape and upside-down turning

The difference between the conical cake pan and other cake pans lies in the geometry of the edges: instead of being vertical like the cylindrical cake pan, the edges slope outward from the bottom to the top. This inclination has a precise technical function: when the cake is inverted onto a serving plate, the conical shape guides the release and the cake slides out of the mold evenly, without breaking at the corners.

The result is a cake with a wider base than the top, a truncated cone shape with a refined appearance without decorating the sides. For cakes served with powdered sugar on the flat top surface (which used to be the bottom), the conical cake pan is the perfect size.

Desserts for which to use the conical cake pan

  • Caprese cake: the flourless chocolate and almond cake with a firm texture for upside-down unmolding. It comes out with powdered sugar on the flat top surface.
  • Almond cake: dense, compact dough that holds its shape after unmolding.
  • Lemon or orange cake: fruit cakes with a moist, compact texture come out well from the conical cake pan.
  • Clafoutis and fruit flans: semi-liquid preparations that firm up during baking and are served upside down.
  • Rice cake and baked puddings: the conical shape is the classic one for puddings served on a plate with caramel dripping from the edges.

7-layer coating: the cake comes out intact.

Unmolding upside down only works if the cake comes out evenly from the entire inner surface, bottom and sides together. The 7-layer, PFOA-free, scratch-resistant coating ensures this uniformity: no area where the cake sticks more than the others. Wait for the cake to cool partially, place the serving plate on top of the mold, invert in a single motion, and lift the mold: the cake is on the plate, intact.

Without nonstick, turning the cake upside down requires greasing and flouring the entire interior surface, and even then the risk of breakage is high. The 7-layer coating eliminates this risk.

The Mamù conical cake pan is available in several diameters:

  • Small size: for single-serving cakes and compact desserts served in thin slices
  • Medium size: the standard size for cakes for 6-8 people
  • Large size: for special occasion cakes and large batches

Conical cake pan and cylindrical cake pan: when to use which one

The dessert is served straight from the pan (sponge cake, layer cakes, cheesecake): use the cylindrical cake pan. The dessert is inverted onto a plate and served with the bottom half exposed (caprese cake, puddings, clafoutis): use a conical cake pan. The shape of the edges determines the ease of unmolding and the final result on the plate.
