Keep in mind that, according to regulations, mussels should never be immersed in dirty water, so you should just rinse them quickly. Then, you can open them by inserting the blade between the shells, starting with the one that seems narrowest. Separate the mussel from the shell until you can complete the rest of the maneuver with your fingers.
