In the 1960s, Mario Mugnano , still very young, took his first steps working in his father's factory, learning the secrets of the process.

After years of passion and dedication, Mario Mugnano brought his vision to life , creating his first company producing nonstick aluminum cookware with his sons. This same passion led his sons to work side by side with him.

The non-stick pizza roaster is the shallow round pan for classic oven-baked pizza: the circular shape, flat bottom, and scratch-resistant, 7-layer PFOA-free coating distribute heat across the entire surface, and the pizza base comes off without tearing. Mamù makes it from aluminum, available in three sizes. Made in Italy.

The pizza roaster and round pizza baking

The pizza roaster is the pan for round Italian oven-baked pizza: the circular shape is the classic Neapolitan pizza, replicated at home in an electric or gas oven. The flat bottom transmits heat throughout the dough, from the center to the edge, eliminating overcooked or over-burned areas.

The difference between the pizza roaster and the perforated pizza pan is in the base: the roaster has a flat bottom, retaining moisture in the base during the initial cooking phase and producing a softer crust. The perforated pan has a perforated base for a crispy crust from the start. A soft, high base with the roasting pan, a crispy base with the perforated cake pan.

Three sizes available

The Mamù pizza roasting pan is available in three sizes:

  • The smallest size, for single-portion pizzas or compact ovens, fits even the narrowest built-in ovens.
  • The medium size, 28-30 cm, is the standard size for pizzas for 2-3 people, the most used in Italian cuisine.
  • The large size, for larger ovens and for pizzas to be shared by four or more people.

With the 7-layer, scratch-resistant, PFOA-free coating, the pizza base separates from the bottom without tearing, even with highly hydrated doughs. They tend to stick in unlined pans. Reduce the oil on the bottom of the pan: less oil, a drier, less fried base, closer to the pizza of a pizzeria where the dough is cooked on refractory flooring.

Other uses of the pizza roaster

The flat round shape of the pizza roaster also works well for:

  • Low round focaccia: focaccia with olives or cherry tomatoes, with a flat, crispy base
  • Quiche and round savory pies: shortcrust pastry in the pizza roaster for savory pies for a quick lunch
  • Gratin vegetables: sliced ​​vegetables arranged in a circle and gratinated on the surface
  • Baked frittata: pasta or vegetable frittatas that are baked in the oven for even cooking on top and below

Pizza roaster and pizza pan: which one to choose

Both are round pizza pans, but produce different results:

  • Pizza roaster (flat bottom): soft, airy base, high, fluffy edge. For deep pan pizza with a generous crust.
  • Perforated pizza pan (perforated bottom): crispy base, faster cooking, less moisture in the base. For crispy Neapolitan pizza and thin-crust pizzas.
