Today we offer you a fresh recipe that's perfect for gathering strength in preparation for the heat: Chicken salad . It's one of the most versatile preparations ever because you can take it to the office, serve it for dinner to friends who have invited themselves over at short notice, or use it for occasions such as appetizers and buffets.
Choose your favorite vegetables, even seasonal ones, and add a sauce if you like: this way, you can personalize an already incredibly versatile dish! Let's get to the preparation.

Ingredients for 4 people:
- 600g chicken breast, filleted
- 30g pitted green olives
- 60g of gherkins
- 200g of red peppers
- 170 g of white celery
- 150 g of carrots
- 100g of cheese
- 100 g of extra virgin olive oil
- 20 g of white wine vinegar
- Salt and pepper to taste
Chicken salad preparation
- Pound the chicken slices, breaking the meat into pieces on baking paper.
- Get one of ours steaks and grills and start cooking. Turn the chicken only once, when the meat is thoroughly cooked.
- Once cooked, add the salt, which will dissolve when it comes into contact with the heat. Then, place the chicken slices on a plate and let them cool.
- It's the vegetables' turn: first the peppers, which need to be cleaned and cut into julienne strips.
- Then it's the carrots' turn: peel them and cut them into strips.
- Continue with the celery, whose ribs should be cut into rounds.
- Also prepare the gherkins and olives.
- If you're a cheese fan, now's the time to cut it into sticks.
- At this point, the chicken will be cool enough to cut into strips.
- If you want to add a dressing to the salad, you can prepare it at this point: take the mayonnaise, add a little mustard, white wine vinegar, salt, pepper, and oil. Mix and set aside.
- In a large bowl, add the chicken and vegetables.
- Season with the sauce and to let the flavors blend well, cover with cling film and place in the refrigerator.
- After an hour, the chicken salad will be ready to serve.
