Today we're tackling one of those very famous and much talked about recipes: the tiramisu recipe .

We at Mamù, to avoid offending anyone, will not discuss the history of this delicious dessert (since its invention is disputed by many Italian regions), nor will we suggest an extravagant recipe or a variation on it.

Do you like to flavor it with Marsala or other liqueurs? That's your problem. We'll take the flavor of mascarpone cream and gorge ourselves on coffee-soaked ladyfingers. The key word: classicism

Difficulty: just enough to call it a "challenge"

Preparation: less than an hour, more than half an hour

Cost: not much but not very little either

Resting time in the fridge: two hours

Ingredients for eight people:

  • 300 g of Savoiardi biscuits

  • 4 eggs

  • 500 g of mascarpone

  • 100 g of sugar

  • 300 g of coffee

  • Bitter cocoa to taste

Preparation method:

  • Start with the eggs: separate the egg whites from the yolks, and beat the latter with an electric whisk, gradually adding 50g of sugar.

  • Add the mascarpone as soon as the mixture becomes light.

  • Continue beating with an electric mixer until the cream is thick and compact. Set aside.

  • Clean the whisks and then use them this time to beat the egg whites until stiff, adding the remaining 50g of sugar a little at a time.

  • Once finished, take a spoonful of egg whites and pour them into the egg yolk and sugar mixture. Stir vigorously with a spatula to dissolve the mixture.

  • Add the rest of the egg whites a little at a time, mixing from top to bottom.

  • You take a 30x20 Mamù baking pan and spread the mixture on the bottom.

  • Now it's time for the ladyfingers: dip them in the cold coffee, first on one side and then on the other.

  • Place them on the cream to obtain the first layer.

  • Take the mascarpone cream and spread it over the first layer of ladyfingers.

  • Be careful when leveling the cream: try to obtain as smooth a surface as possible.

  • Continue alternating strips of soaked ladyfingers with layers of cream until you run out of space and ingredients.

  • Dust the entire surface of the Tiramisu with bitter cocoa powder.

  • Put it in the fridge and leave it there for a couple of hours.
