Painting
At this stage, the raw aluminum disc is prepared and enhanced through a sophisticated 7-layer painting process on both sides. This advanced technology ensures maximum adhesion of the coating and allows for the creation of high-quality finishes, from glossy black to a textured stone effect.
- Surface pretreatment for perfect anchoring
- High-resistance 7-phase painting cycle
- Special finishes and stone effect
Molding
The painted discs are transferred to the stamping department where, using high-precision automated presses, the metal is cold-molded. This process transforms the flat disc into the three-dimensional body of the pot, simultaneously defining its structure and the design of the base.
- Mechanical transformation from disc to pot body
- Impression of the technical drawing on the bottom
- Fully automated pressing process
The non-stick cylindrical cake pan is a round mold with high, vertical edges that gives cakes the classic layered cake shape: clean edges, uniform height, and a flat surface for decorating with cream. With the 7-layer, scratch-resistant, PFOA-free coating, the cake releases from the edges without breaking at the corners. Mamù produces it from Italian aluminum, available in several sizes. Made in Italy.
The cylindrical shape and layered cakes
The cylindrical cake pan is the standard mold for cakes that are cut into horizontal slices and filled with cream, whipped cream, or jam between each layer. The high, vertical edges guide the batter upwards during baking, without deforming it at the sides. The result is a cake with the geometrically clean shape of a cylinder: easy to cut into layers, ready for decorating.
The vertical edges keep the dough in place throughout the baking process. For tall sponge cakes, leavened cakes that rise significantly in the oven, or layer cakes with layers of equal height, the cylindrical shape is the perfect tool.
Non-stick coating: unmold with clean edges
Unmold is the critical moment, even more so in the cylindrical cake pan, where the cake must emerge intact on all sides. The 7-layer, PFOA-free, scratch-resistant coating detaches the cake from the vertical edges and the bottom without breaking. Leave it out of the oven for 5-10 minutes, then turn it out onto a wire rack: the cake comes out with a smooth surface and clean edges.
Without nonstick, the pastry sticks at the corners where the edge meets the bottom, the most critical point of the cylindrical cake pan. The 7-layer coating solves this problem on all doughs.
Desserts for using a cylindrical cake pan
- Sponge Cake: The cylindrical pan is the standard for classic sponge cakes, which are cut into three layers and filled.
- Strawberry Cream Cake: Clean edges that support the cream on the sides during assembly.
- Baked Cheesecake: The cylindrical shape is the classic cheesecake, with a biscuit base and creamy filling.
- Birthday Cake: The cylindrical shape supports the sugar paste and ganache decoration.
- Yeasted Chocolate Cake: The height of the edges guides the vertical rise of the dough. leavened
- Angel cake and chiffon cake: soft doughs that rise evenly with vertical edges
Available sizes
The Mamù cylindrical cake pan is available in several diameters:
- 18-20 cm: for small cakes for 4-6 people or for layer cakes with multiple thin layers
- 22-24 cm: the most used size in Italian recipes, for cakes for 6-8 people
- 26-28 cm: for large cakes for 10-12 people and for special occasions
Cylindrical cake pan and flared cake pan: the difference
The flared cake pan (or bell-shaped) has vertical edges Slanted outwards. It works for desserts that are turned upside down: almond cakes, caprese cakes, and compact cakes. The cylindrical cake pan has vertical edges. It works for layered desserts that are served upright: sponge cakes, birthday cakes, cheesecakes. The shape of the edges determines the type of unmolding and the final result on the plate.
