What is an induction cooktop and how does it work?

Cos’è una cucina a induzione e come funziona

Wow, congratulations on taking the big step. You'll be living on your own and getting an induction stove. Wow, life's going really well for you, huh? How? They gave you a room for €300 a month and an induction stove shared with three other people?

Never mind. Read this and know that, in times of misfortune, you have Lady Luck on your side.

Induction cooking and its advantages

The first advantage of working on an induction hob concerns Safety : It would have to be snowing in hell for an induction hob to cause you pain. Assuming it exists.

There are no flames, no gas leaks, no need for ventilation , if you put your hands on the hob nothing will happen: what more could you want? The induction hob is very special: since it is powered by electricity, the heat is transmitted to pots and pans thanks to magnetic fields . Here's why The tools heat up, but not the hob . Furthermore, the cooking zone is active only when pots and pans are in contact: the entire surrounding surface remains cold.

As if that weren't enough, you can never leave the stove on, since 1: you don't have a burner, 2: the hob turns off by itself when you go to remove the pot or pan.

The induction hob is safe: there are no flames, no gas leaks, and no need for ventilation.

Powered by electricity, heat is transmitted to pots and pans via magnetic fields. This heats the utensils, not the cooktop.

It uses as much energy as a hairdryer, dishwasher, or refrigerator. Plus, it's environmentally friendly because it produces no CO2 emissions.

How much energy does an induction hob consume?

We'll tell you right away: Not much . An induction hob with all four burners turned on doesn't even reach 1.5 kW. Dishwashers, hair straighteners, and hairdryers do, too. So you can see that it's comparable to any other household appliance. Not to mention that with an induction hob, you reduce CO2 emissions into the atmosphere and can also obtain electricity from renewable sources, perhaps domestic ones.

One area worth exploring is definitely energy loss, which is minimal. Since the heat is generated at the bottom of the pan, once it is in direct contact with the plate, loss is almost zero.

Finally, no one ever thinks to the time saved . On an induction stove, time literally flies. Cooking a liter of water, for example, takes about three to four minutes. On a gas stove, you'll need at least seven.

What pots to use

Obviously ours, otherwise we wouldn't be here, do you think? No, we're joking, we're interested in providing you with useful information first and then, if you really insist, we'll tell you that there is a Mamù line entirely dedicated to induction.

First, you can search among the pots and pans you already have at home for those with an iron bottom . Since the induction hob works like an electrically powered magnet, cast iron and steel products (enamelled or stainless steel) can be used on an induction hob.

There's still more to say on this point, but we'll do so very soon with a new article dedicated entirely to pans for use on induction cookers. For now, let's get started. take a tour of our website to discover our dedicated line.
