Mamù Cookware

For over 70 years guided by passion, design and innovation Made in Italy

Mamù was born from the experience gained over 70 years of producing aluminum pans and pots. The first generation of the Mugnano family entered the world of cookware in 1950. In the 1960s, Mario Mugnano , still very young, took his first steps working in his father's factory, learning the secrets of the process.

After years of passion and dedication, Mario Mugnano brought his vision to life , creating his first company producing nonstick aluminum cookware with his sons. This same passion led his sons to work side by side with him.

Painting

Painting

At this stage, the raw aluminum disc is prepared and enhanced through a sophisticated 7-layer painting process on both sides. This advanced technology ensures maximum adhesion of the coating and allows for the creation of high-quality finishes, from glossy black to a textured stone effect.

  • Surface pretreatment for perfect anchoring
  • High-resistance 7-phase painting cycle
  • Special finishes and stone effect

The non-stick bundt cake pan is the classic Italian ring mold: the central hole directs heat to the dough from all directions, for even cooking even with dense or abundant doughs. With the scratch-resistant, PFOA-free 7-layer coating, the bundt cake comes out of the mold intact, without tearing. Mamù produces it from aluminum. Made in Italy.

The central hole: the technical function

The central hole of the bundt cake pan is not just aesthetic. A dense dough like that of a classic bundt cake made with eggs, butter, and sugar needs the heat to reach the inside without burning the outside. The hole creates a second heat perimeter: the dough cooks from the outside in and from the central tube out. Baking is quicker and more even than with a full pan.

Recipes for the ring pan

  • Classic ring pan: butter, sugar, eggs, and flour. The breakfast cake that every Italian family has at home on Saturdays
  • Yogurt Donut: the version with yogurt instead of butter, softer and moister
  • Chocolate Donut: with cocoa or dark chocolate in the batter, with chocolate glaze poured into the center hole
  • Lemon Donut: with grated lemon zest and lemon juice in the batter
  • Marble Donut: with white and cocoa batter alternating in layers for the classic marble effect
  • Savory Donut: savory batters with cheese, ham, or olives. It is served as an appetizer or a rustic aperitif.
  • Savarin: the rum cake soaked in syrup, with a central hole to fill with cream and berries.

The non-stick coating and unmolding the donut.

Unmolding is the most critical step: the dough must release evenly from the outer edge and the central tube. The scratch-resistant, 7-layer, PFOA-free coating of the Mamù donut mold ensures uniform release across the entire internal surface, outer edge, inner edge of the hole, and the two flat surfaces. Leave it out of the oven for 10 minutes, then invert it onto a plate and lift the pan. The donut is now on the plate, perfectly formed.

Available Sizes

The Mamù donut pan is the standard size of the Italian tradition: 24-26 cm in outer diameter, with a hole designed for the heating function. This size corresponds to that indicated in most Italian donut recipes.

Caring for your donut pan

Clean the pan with hot water and a soft sponge after each use. Abrasive sponges will scratch the non-stick coating. Avoid the dishwasher: aggressive detergents will deteriorate the coating over time. Dry immediately after washing to avoid oxidizing the aluminum in areas where the coating is thinnest.
